If I erase all the characters will the map go away? If not how do I reset the game? I want to play it again with a fresh start.

just starting a new party ought to do what you wish. fortunately, for people like you (of which there are many), older Wizardry games are designed simply. basically a 2d map with specials, some of which check for certain items in your possession. when you "clear" one such special (like many encounters behind doors), you can "reset" it, so it comes back, by simply going back to the Castle. in fact, this is how most earn Mega XP and items, once they find a good spot.
anyway, back to your question, start off with fresh characters, and you will be starting off anew. those other characters don't mean jack squat, unless you use them. and yes, you can feel free to delete them, if you really want to.

Ahem... for SNES Wizardry V, delete all your characters, and then pick delete again.
