I am trying a game with a female faire ninja and a female human monk. I seem to get slaughtered around level 6 by metallic/slithering slimes. Any advice on how to get those guys?

You may want to skip you level ups for a bit.
Once you level up you can skip leveling. You can still get better through practice and the creatures will not go up any further.
